Aunt Denise’s Meatballs
The Hoban/DiSabatino women are a bit snobby when it comes to Italian food, and these meatballs are the best classic recipe. So easy to pop in the crockpot with marinara sauce for a party or potluck! True Italian recipes are imprecise with measurements due to Italian grannies not wanting anyone to have their real recipes, so there’s a little of this, a little of that.

Ingredients
- 1 lb ground beef or meatloaf mix (pork/veal/beef) Sure you can substitute turkey but why? - 80/20 is best if using ground beef
- Chopped or grated garlic, to taste
- 1 small vidalia onion, chopped or grated
- Handful of fresh parsley, chopped
- 1 egg
- Roughly a cup of unseasoned breadcrumbs
- Roughly a cup of parmesan cheese
- Salt and pepper
Instructions
- Dump everything in a big bowl and use your HANDS to mix it together until just combined. If too wet, add more breadcrumbs. If too dry, add more egg.
- Roll into ball size of your choice, just make sure they’re consistent so they cook evenly.
- Brown in a pan on the stove, on a cookie sheet in the oven or in a muffin tin until brown. Finish cooking in sauce.
