Pastina Soup

Pronounced “pastini” soup in our family. It’s simple and delicious. You could find Joe Carre making this on any given weekday, or when one of the Carre girls were sick! Lauren Hoban pro tip - DON’T add vegetables unless you want Luke and Rosemary to tell you that you ruined it.

Also, Italian plural words end in “i” so Pastini is actually correct!

Pastina Soup

Ingredients

  • 1 large skinless, boneless chicken breast
  • 2 quarts chicken broth (store bought or homemade)
  • Pastina (eyeball, maybe ½ or ⅔ of the box)
  • Couple handfuls of fresh baby spinach
  • Parsley (optional)
  • Salt and pepper, to taste
  • Parmesan, for serving

Instructions

  • Heat two quarts of chicken broth and add the chicken. Cook the chicken through, remove, and dice it up (or shred). Set aside.
  • Bring broth to a rolling boil and add the pastina. Lower heat and simmer until pasta is cooked. Add the chicken back to the pot. Add salt and pepper to taste.
  • Before serving, add the spinach and parsley and stir to warm.
  • Serve with parmesan cheese!
